Thai style minced meat omelette rice

Preparation time: Within 30 minutes Servings: 1-2 people

Ingredients: 300g minced pork, 3 dried shallots (cut into minced), 3 cloves garlic (cut into minced), 2 chilli padi (cut into rings), 2 tbsp dried shrimps, 2 tbsp fried shallots, lemon leaves (shredded) ) 6 slices, 1 lime zest and juice, 1 tablespoon cooking oil, appropriate amount of fish sauce, 1 fried egg, 1 bowl of white rice
Pork marinade:
1 tablespoon fish sauce, 1/2 teaspoon salt, a little sesame oil

  1. Add marinade to pork, mix slightly and marinate for about 15 minutes.
  2. First dry the shrimp skin in a white wok over slow heat and set aside.
  3. Heat oil in a wok over medium heat, add pork, dried onion, garlic and chilli padi, stir-fry until completely golden and loose.
  4. Add lemon leaves, dried shrimps, lime zest and lime juice, add fish sauce to taste and fry until dry. Finally add fried shallots and mix well. Serve with fried eggs and white rice.
    When marinating the pork, be sure not to stir clockwise, otherwise the pork will gel and form clumps, making it difficult to stir-fry into loose minced meat.
